We have a list online of stars easy to observe with binoculars. It is a list we send out to new members in their new member kit. http://charts.aavso.org/binocularstars.stm But there is a better way of finding charts for this project. You can get a very detailed AAVSO chart search engine here: http://charts.aavso.org/searchcharts.shtml You can search by many filters. For your purposes, put in your declination limit and choose the A or B chart scale. You'll get all the charts we have for binoculars south of whatever declination you enter. Aaron p/s: Regarding the chart search engine, if the star has a greek letter, just spell it out ("lambda"). If it still can't find it, then we don't have a chart for it.
