My top 10 variables of the century are:
1) Sun, for showing us that it is so variable (pulsations, spots,
ellipticity, rotation etc)
2) cepheids, for their contribution to extragalactic astronomy
3) Algol, for starting "binary madness"
4) Crab pulsar
5) T Tau
6) CH Cyg
7) Eta Carinae
8) AM Her
9) SN 1987A
10) 3C 273
